Irish Cream Cookies

I've always enjoyed making cut-out cookies.  Sure, they take time, but to me, it's fun!  (I know my mom wouldn't agree with that.)  Here's a recipe I got from my friend Lauren.  Cut-out cookies with Bailey's Irish Cream.  What could be better?  It's my new favorite cookie recipe!

Cookies:
1 cup butter
1 1/2 cup sugar
1 tsp vanilla
1 egg yolk (That's the yellow part for those of you that don't bake often. =)  If you don't have a fancy yolk separator, just do what I do.  After you crack the shell, pour the yolk back and forth between shell halves.  Eventually the egg white will just fall out.)
1 egg (regular)
1/2 cup Irish Cream
4 cups flour
1/2 tsp salt
1 Tbsp baking powder

Refrigerate for minimum of 2 hours. Bake at 350 for 6 to 8 minutes.  (I refrigerated overnight and baked for closer to 10 minutes.)

Frosting
1/2 cup butter
2 cups powdered sugar
2 Tbsp Irish Cream
1/2 tsp vanilla
2 to 3 tsp milk
Food coloring of your choice (I prefer the gels over the liquid.  Way more color choices and it requires so little gel.)

  1. Hi Sarah…yes I do remember you! We had dinner together while we were in KC for Erin’s bachelorette weekend! And I’m the same way…stumble upon blogs and love reading them! Looks like things are going well for you in KC! Your little pooch, Kinnick is adorable! :)Love your cooking posts too…Yummy!!

    As for my blog header – I designed it. I have the Adobe Suite and just used InDesign to lay it out and then made it a JPEG, so blogger would recognize it as a picture. Then I just went to the ‘design’ tab and hit the ‘edit’ button on the header. I added my image I wanted for my header and then clicked the “Placement option: Instead of title and description” option. Click save and it worked. I’m not sure if you could do the same type of thing using Word or some other program? But if you can’t figure it out, I’d be more than happy to take some of your pictures and make a quick layout for you – then you could just place them in your blog header like you have your current picture. It really doesn’t take any time at all. :) Just let me know!

  2. So I was jut going to comment on this post and see my girlfriend Jackee did, geez maybe I can get her to help me with my blog changes too! Jackee's blog looks pretty expertise so I would def look into her tid bits of info!

    So back to my comment... your cookies are making me drool, can you mail me some? LOL! Trying to figure out when I may have time to whip up a batch! I'm hestiant on the whole putting in the labor though, I'm pretty darn lazy when it comes to cooking and girl those cookies look like work!
