Summer Strawberry Bruschetta


For Monday night's bachelorette finale watch party (yay Chris--he was my fave!), I wanted to make something sweet and summery.  I scoured Pinterest for the perfect recipe and knew this was "the one".  I love bruschetta.  I love basil.  And I love balsamic vinegar.  Pair those with strawberries and you have the perfect summery, dessert-like appetizer.  They were a major hit and I will be making them again!  Soon!  I didn't follow the instructions completely, so here is my version!

Summer Strawberry Bruschetta

Ingredients:
1 Archer Farms Take & Bake Baguette
Olive oil cooking spray
16 oz container of strawberries
2 Tbsp sugar
4 oz goat cheese
Fresh basil
Olive oil
Balsamic vinegar
Cracked pepper

Directions:
1. De-stem and dice strawberries into small pieces (should be about 2 cups); mix with 2 tablespoons of sugar.  Allow strawberries to sit for about 30 minutes to release juices.
2. Meanwhile, pre-heat oven to the low broil setting.  Slice baguette into about 1/2 inch thick pieces, place on a cookie sheet, and spray each piece with olive oil cooking spray.
3. Bake baguette slices on broil setting (top rack) for about 10 minutes, or until lightly browned and crispy.  Allow to cool.
4. Meanwhile, slice fresh basil leaves into thin strips.
5. Once cooled, spread goat cheese on each slice of baguette.  Top with strawberry mixture.
6. Drizzle with a little olive oil, balsamic vinegar, and cracked pepper.
7. Enjoy!  Careful...you might just eat all of them!
