A Perfect Summer Dessert



I was in a bad mood tonight.  I was at the store trying to figure out a plan for dinner when these things caught my eye.


I figured dessert always makes me feel better, so I threw the package in my cart.  I decided to semi follow a recipe on the back for strawberry-kiwi crépes, but I mixed it up a bit.  The final product was delish!  A perfect summer dessert in my opinion.  The hubs agreed.  In fact, we may have just finished our plates of seconds. :)

Strawberry-Blueberry Crépes

Ingredients
1 package of Melissa's crépes (at Target)
2 cups heavy whipping cream
1/2 cup sugar
2 teaspoons vanilla
Strawberries, sliced
Blueberries
Chocolate sauce
Reddi whip


Directions

1) Using an electric mixer, whip the cream until semi-thick. (The actual directions said to do so until "medium peak".  I wasn't sure what that meant.)

2) Add sugar and vanilla and whip until thick.  (Or until "stiff peaks", if you speak that language.)

3) Gently fold in sliced strawberries and blueberries.

4) Place mixture in center of crépe and roll.

5) Top with chocolate sauce, reddi whip, and garnish with more fruit.  Enjoy!


A couple of notes:
  • I don't like to think of fruit as dessert.  That's why I added the chocolate sauce.  And I must say, it was a great addition!
  • You could easily half this recipe, and I definitely will next time!  I'm not sure how the whipped cream will hold up overnight.  (If it does, I'm having more for breakfast!)

  1. I cannot wait to try this! Looks delish and I love crepes! I know what they mean by 'peaks' but do find it confusing how you are suppose to tell the difference between medium and stiff peaks though! Thanks for the shout out/link on my salad, these crepes would be great with that!
